Delicious!

Holidays not too far away, and Cindi and I were wondering about whether there might be a low-carb variety of Marzipan (which we dearly love). There is! Here's the recipe we followed. We stirred it together and shaped the balls and had them in the fridge to chill in like five minutes. Sweet!

Ingredients:
1 7-oz. pkg. of unsweetened grated coconut
1 pkg sugar-free gelatin mix (small box - unflavored is best!)
1 cup almond flour
1/2 cup heavy cream
2/3 cup Splenda
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
Combine all ingredients. We just rolled into little balls, but they can be pressed into various molds if you have them. Chill until forms hold their shape. You can add food coloring when the holidays come and make them red and green.

Makes 24 1-inch forms — 5 carbs per piece.

I fortunately had all the ingredients on hand, so I made the recipe immediately after reading the blog--delicious! Quick and easy! Will probably dip in chocolate for the holidays.
